Carbohydrates are the major source of calories the body uses to provide energy for work, cell maintenance and heat. Nerve cells in the brain and retina, and other parts of the nervous system and the red blood cells use carbohydrates for fuel. Muscles also get most of their energy from carbohydrates during High-Intensity exercise. Each gram of carbohydrate provides the human body with 4 calories.
Carbohydrates are divided into simple carbohydrates and complex carbohydrates.
1. simple carbohydrates-simple carbohydrates (or simple sugars) such as candy, soda and cakes have little nutritive value.
2. complex carbohydrates-starches, dextrins, Glycogen are the three types of complex carbohydrates. These carbohydrates provide many important nutrients and are also an excellent source of fiber. Starches are found in seeds, grains, potatoes, legumes, nuts and roots. Dextrins are formed when breads are baked or cold cereals are produced. The liver and muscles take up and store glucose molecules in the form of starch called Glycogen. When the body needs energy, enzyme in the muscle and liver breaks glycogen and make glucose available.
3. Fiber-fiber is a form of complex carbohydrates. A high-fiber diet gives a person a feeling of fullness without without added calories.
